Step 1
Preheat oven to 350°. In a large bowl, combine flour, 1-1/2 cups sugar, soda and salt. In a small bowl, whisk eggs, buttermilk and oil. Stir into dry ingredients just until moistened. Fold in raisins. Combine cinnamon and remaining sugar; set aside.
Step 2
Spoon half the batter into 2 greased 8x4-in. loaf pans. Sprinkle with half of the reserved cinnamon sugar; repeat layers. Cut through batter with a knife to swirl.
Step 3
Bake 55-60 minutes or until a toothpick inserted in center comes out clean. Cool 10 minutes before removing from pans to wire racks. Freeze option: Wrap cooled bread in foil and freeze for up to 3 months. To use, thaw at room temperature.

2/3 cup sugar
1/2 cup 2% milk
1 large egg , room temperature
1 teaspoon vanilla extract

cut into cubes (about 3 cups)
optional toppings: confectioners' sugar and
whipped cream

Step 1
In a small microwave-wave bowl, melt chocolate; stir until smooth.
Step 2
Stir in cream; set aside.
Step 3
In a large bowl, whisk the sugar, milk, egg, vanilla and salt. Stir in chocolate mixture. Add bread cubes and toss to coat. Let stand for 15 minutes.
Spoon into 2 greased 2-cup souffle dishes. Bake at 350° until a knife inserted in the center comes out clean, 30-35 minutes.
Step 5
Sprinkle with confectioners' sugar and top with a dollop of whipped cream if desired.

Step 1
Prepare the Sponge: Stir together milk, flour, and yeast in the bowl of a stand mixer until well combined. Cover with plastic wrap; let rise in a warm (85°F) place, free from drafts, until doubled in size, about 30 minutes.
